What hanging weight actually means.

If one thing on this site is worth reading twice, it is this. Nearly every unhappy beef-share story starts with someone who did not know.

Live weight

What the animal weighs standing in the pasture. You never pay on this number, and we only mention it so you know it is not the one being used.

Hanging weight

The carcass on the rail, after the hide, head, and organs are removed. This is the number your price is calculated from at $14 per pound. It is roughly 60 to 64 percent of live weight.

Take-home weight

What actually goes in your freezer, after cutting, trimming, and boning. It lands around 60 to 65 percent of hanging weight, so a 200 lb quarter comes home as roughly 120 to 130 lbs of packaged beef.

This is why we quote a range rather than a price. Neither we nor the processor knows your exact total until the carcass is weighed. We will tell you the moment we do, before anything is cut.

Step by step

What happens, in order.

  1. Day one

    You tell us what you have in mind

    Call, text, email, or send the form. We will ask how many people you cook for, how much freezer space you have, and how you like to cook, then advise you honestly whether a quarter, a half, or a selection of cuts suits you better.

  2. Same week

    We confirm what is actually available

    We sell one animal at a time, so availability is finite and real. If nothing is ready, we will tell you when the next one will be, rather than take money against a possibility.

  3. You reserve your share

    Your place is held against a specific animal. You are welcome to visit and see it. Most people who do so go on to buy, which is why we keep extending the invitation.

  4. We build the cut sheet together

    You decide steak thickness, roast size, how much of the chuck goes to ground, and whether you want the bones and organs. If you have never done this before, we will guide you through it and recommend a sensible starting point.

  5. Harvest

    The animal is processed and hung

    Processing is state-inspected at a local facility. The carcass is weighed on the rail. That figure is your hanging weight, and it is the number your price is calculated from.

  6. We tell you the final figure

    Once we have the hanging weight we can work out your exact total. Only at this point does anyone know it, which is why every figure on this site is a range.

  7. Delivery

    Frozen, labeled, and brought to you

    Everything is vacuum sealed, labeled by cut, and delivered frozen within 60 miles of Yoakum. Further out, you are welcome to collect from the ranch.

Where we deliver

We deliver frozen within 60 miles of Yoakum, covering Victoria, Cuero, Gonzales, Shiner, Hallettsville, Schulenburg, Edna, and Goliad, along with the country in between.

That radius does not reach San Antonio, Austin, or Houston. If you are further out, you are welcome to collect from the ranch, and a good number of visitors treat the drive as a day out.
